I’m gonna level with you…

Creativity in meal prep is really REALLY tough to achieve day after day. Just like you, I get into ruts where it’s just way easier to hit the repeat button and make the same thing I did yesterday. I’m particularly guilty about this in the breakfast department. 

There are only so many hours in the day and the last thing I want to do with my limited free time is to stress about food. But hey, I found a solution before – and now I have another trick up my sleeve when it comes to making easy and delicious breakfast in not time flat.

Seize the day and your Crock Pot! 

Last week, I spilled the beans about how to create easy Crock Pot recipes at dinner time (read that here), but we all know that breakfast is the most important meal of the day!  This is the Crock Pot I have (and LOVE).

Like most mamas, mornings tend to be somewhat crazed in my house, between diaper changes, sneaking in a workout, and getting myself and the crew ready for the day, creative breakfast options take a backseat to the fastest and easiest things that will fill hungry bellies fast. Bananas for breakfast, anyone? 

Desperate times call for desperate measures.

My morning meals needed a makeover, but I was NOT going to sacrifice sleep or stress myself out to do it. I decided to put my Crock Pot up to the challenge. Like a mad scientist, I began tossing ingredients in my trusty slow cooker in the hopes that the morning would bring a bounty of flavor. It did!

One of my favorite concoctions is this antioxidant-rich easy recipe for Apple Quinoa Porridge. Waking up to the scent of warm apple cinnamon is a sure way to start the day off right, but don’t be afraid to perform your own experiments and try a variety of fruits, nuts, and seeds to stave off boredom.

Ingredients
  1. 2 cups almond or coconut milk {buy coconut milk here}
  2. 2 cups filtered water
  3. 2 cups pre-soaked (12-24 hours) quinoa {buy here}
  4. 2 cups diced apples
  5. 1/3 cup chia seeds {buy here}
  6. 1/3 cup Grade B maple syrup {buy here}
  7. 1 teaspoon cinnamon {buy here}
Instructions
  1. Combine all ingredients into Crock Pot and cook on low up to 8 hours.
  2. Go to sleep.
  3. Wake up and eat!
Notes
  1. It is best to soak or sprout quinoa {or any whole grain or bean} to remove the phytic acid that has been known to bind up minerals and enzymes that, for some people, can make the whole grain difficult to digest. Soaking or sprouting also improves the assimilation of nutrients in the grain – the reason we EAT them. To pre-soak your quinoa, place 2 cups of dried quinoa in large bowl, cover with filtered water, and 1 tsp. raw apple cider vinegar. Cover, and allow to sit at room temperature for 12-24 hours. Drain, rinse, and then use as directed in recipe.

This probably leaves you wanting more, I know. But it REALLY is that simple. There is a plethora of variations to this recipe that I like to play around with. Instead of apples try peaches, pears, or cranberries or even add walnuts or almonds for more texture. I also love a dollop of these yummy fermented berries a-top this breakfast goodness, for added gut-friendly goodness!
