I love salad, particularly those which feature fruit. Nothing like a nice, refreshing salad topped with apples, pears, grapes, or when in season, strawberries. If it’s one thing this house LOVES, it’s strawberries. Here in the Northeast, we’re still a couple of weeks out before peak strawberry season hits, of which I’ll be making a regular appearance at my friend’s farm picking and freezing, freezing and picking to get me through next winter. Carbon footprint aside, this girl just can’t pass up $3.99/lb. for organic strawberries at the grocery store, so I’ve been supplementing my dwindling stash with imports. Fellow locovores, I hang my head in shame.

Sooo, about the salad {that’s why you’re here, no?}

Nutritious indeed. Check out these stats:
  • Asparagus: The ultimate natural detox, loaded with potassium, fiber, and asparagine, which, since the dawn of time, has made it the remedy of choice for urinary tract issues.  This is why your pee pee smells so strong the next day. It’s a GOOD thing.
  • Strawberries: Where do I begin? Strawberries boast cancer-protecting antioxidants, inflammation– fighting phytochemicals, immunity-boosting and wrinkle-fighting Vitamin C, and heart-healthy potassium and fiber.   • Spinach: Another rock star, spinach is super high in fiber {20% of the RDA}, more cancer-fighting flavanoids, inflammation-fighting phytochemicals, immunity-boosting Vitamin A {a key component of white blood cells, which fight infection}, and an amazing source of Vitamin K, which is linked to strong bones, a healthy heart, and superior brain function.

Awesome, right?  

This is **the perfect** complement to your early summer picnics, potlucks, or eating right out of the trough {don’t judge}.

Ingredients
  1. Dressing
  2. ½ tbsp. balsamic vinegar
  3. {buy here}
  4. ½ tsp. raw {ideally local} honey {buy here}
  5. 1 tsp. Dijon mustard {buy here}
  6. ¼ cup extra virgin olive oil {buy here}
  7. Salad
  8. 8 cups baby spinach
  9. 1 cup fresh strawberries, sliced
  10. ½ lb fresh asparagus, sliced on the diagonal into 1-inch pieces
  11. ¼ cup crumbled {raw} goat cheese
  12. 1 tsp. extra virgin olive oil {buy here}
  13. 1 tsp. balsamic vinegar {buy here}
Instructions
  1. Preheat oven to 400 degrees. Prepare salad dressing by whisking 1 tbsp. balsamic vinegar, honey, Dijon mustard, and olive oil together. Set aside.
  2. Place sliced asparagus on baking sheet, drizzle with olive oil and balsamic vinegar and bake for 10 minutes. Remove from oven and allow to cool.
  3. Toss spinach with vinaigrette. Divide evenly among four plates, top with strawberries, asparagus, and goat cheese. Drizzle remaining dressing over top, and serve.
